I am not a big fan of putting rice & potatoes in soup because I like to keep the starches to a minimum. That's why this soup which uses the cream base from white beans is a yummy addition to any soup! This recipe was adapted from One Green Planet's recent post on Herby Bean Soup http://www.onegreenplanet.org/foodandhealth/recipe-herby-soup-and-garlic-bread/ and it is really filling & comforting!
2 yellow onions, diced
2 cloves garlic, minced
1 regular can white kidney beans
4 cups vegetable stock
2 tomatoes diced
2 T tomato paste
1/2 jalapeno (optional)
1 bay leaf
1 tsp rosemary
1 tsp summer savory
salt & pepper to taste
Saute onions until translucent
Add in garlic & jalapeno & cook for one more minute. Add in stock, tomato, bay leaf, rosemary, summer savory & salt & pepper, tomato paste & white beans. Boil for 15 minutes covered

Add to a blender & puree until smooth & serve!
