This may be one of my new favorite soups! This was awesome & really healthy and surprisingly easy to make! Here's what a leek looks like.1 tablespoon water
3 leeks, white and light green parts washed and sliced
1 yellow onion chopped
1/2 teaspoon salt
1/2 teaspoon oregano
1/2 teaspoon basil
1 tablespoon summer savory
2 bay leaves
3 cloves garlic, minced or sliced
3 large Yukon Gold potatoes peeled and cubed
4 cups vegetable stock

Rinse leeks well. Leeks have sand in between the layers so make sure you rinse them really well after they are cut. Add leeks and onions and saute until onions are translucent.
Add salt, garlic, oregano, basil, summer savory and cook for another minute. Add in water, potatoes and bay leaves. Bring to a boil and then reduce to a light rolling simmer for 20-25 minutes. Remove bay leaves and blend mixture in food processor or blender. Add back to pot and cook for another 5 minutes on low simmer to thicken.
