Fresh Salsa


This is the freshest salsa you will ever taste! But with that it only keeps for a couple days. You won't have a problem getting rid of it though, it is usually gone before you can get more chips out to your guests! If you are adding garlic I also recommend you make it the night before to give the spices time to blend together! You can also pair it with the re-fried beans & guacamole to do a 3 layer dip!

6 Roma tomatoes diced (you can use regular tomatoes but Roma hold longer and taste better in this recipe)
1 small can diced tomatoes (optional)
1 diced jalapeno pepper (seeds out if you don't like it too spicy)
2 tablespoons tomato paste
1 teaspoon at a time salt & pepper to taste
2 tablespoons lemon juice
cilantro (to taste) I usually add about 5 tablespoons but some people don't like cilantro so go easy if you have guests
1 tablespoon olive oil
1 large red onion
1 garlic clove or 1 teaspoon dried garlic
You can also top with a tablespoon dried parley to make it more appealing! Taste and add hot sauce or more salt and pepper as needed!
