This is another slow cooker favorite for me because you just throw it all in and turn it on! When finished it gives you a creamy bean without the fat of cream! You can also cook on the stove on low for a few hours until the beans are cooked all the way through.

1 ½ C dried white beans
4 C water
1 Large Onion
5 cloves garlic
3 bay leaves
1 teaspoon thyme
1 teaspoon oregano
2 tablespoons summer savory (optional)
½ teaspoon cracked or fresh pepper
3 tablespoons low sodium tamari or reduce if you have regular
1 teaspoon creole (optional) You can also use a cajun mix in here
Bring beans to a boil in pot & let cook for 5 minutes. Remove from heat & let sit over night. Bring to a boil in the morning & then add to slow cooker with ingredients.You can also skip the last step if you are in a hurry and just rinse the beans & put in the slow cooker. Cook on high for 6-8 hours. Mash some of the beans on the side of the pot with a hand masher, blender or remove some of it and blend. Then add back to beans. This will help create the creamy sauce.
