Daal (Indian Red Lentil Soup)


This soup is amazing! It's great as a soup or a gravy for your rice. It's high in protein & there are no carb fillers! This is super healthy & filling!  If you make a big pot of it you will have leftovers all week.


3 C red lentils washed
1 tsp turmeric & red chili powder
2 Tbsp vegetable oil
1/2 - 1 yellow onion halved then sliced
1/2 tsp mustard seeds & cumin seeds
2 tbsp chopped garlic & ginger (I use a garlic/ginger paste)
sliced ginger about 2 inches long
Cilantro to taste ( I use about 3 Cups)


Add lentils, turmeric, red chili powder, garlic/ginger, vegetable oil in a pot. Mix well. Add enough water to cover it. Turn on high heat & boil until lentils are soft & water is absorbed. Add more water-about 4 cups and bring to a boil. Add in sliced ginger.
In a separate pan add 1 tbsp vegetable oil & heat over medium-high heat. A& cumin seeds and "roast them" until they pop & are a bit brown. Add to soup with sliced ginger & cilantro.
You can also serve this with fresh Naan bread
