Apple Cran Coleslaw


I know this sounds like an odd combination but the apples & cranberries sweeten the bitterness of the vinegar in to make a perfectly combined taste of flavors. Coleslaw is one of those traditional dishes that has been served as a side to deep fried, heavy dishes. Commonly seen as a leftover on plates this wonderful dish has been put to the side & considered a past time. But with this combination and topped off with some almonds it is a perfect mix! So make it a main dish instead of a side or pair it with your favorite BBQ items! Whichever way you do it serve it up with bigger portions and embrace this salad because it it definitely worth it & will impress all your non vegan friends at any summer get together!
1 Bag of coleslaw mix
1 red onion
2 red apples
1/2 C Craisins
4 t apple cider vinegar
1 garlic clove minced
1/4 C olive oil
1 t red chili paste
2 t organic honey or agave nectar
1/4 C Nayonnaise
2 t water

Core apples & slice into matchsticks by cutting into quarters & then slicing

Whisk nayonnaise, apple cider vinegar, olive oil, chili paste, honey & water in bowl

Pour on top of coleslaw mix & add in onions, craisins & almonds & top with some parsley
