I tried these at a restaurant one day and fell in love! Pretty much anything is good deep fried but these were super delicious. By any means these are not healthy which is probably one of the reasons they taste so good but they are a great party snacker! This is great if you have wheat or gluten allergies because it's made with chickpea flour!
2 Cups potatoes cut
1 Cup chickpeas
2 Cups (or more) fresh spinach
1 Medium yellow onion chopped small
1 clove garlic
1 tbsp olive oil
1 Cup water mixed with 1 Cup chick pea flour

Boil potatoes until tender on stove or par boil in microwave. Drain & set aside to cool. Add oil, garlic, onion & chickpeas to pan and saute until onions are translucent & chickpeas are golden brown. In the last 2 minutes add spinach & cover with lid so that it cooks it halfway through.
Mix all ingredients together in food processor & blend or mash with hand masher. Make bite size balls with your hand and set aside. Heat a couple of inches of oil in a no stick skillet. While this is heating up mix the chickpea flour with water & set aside. When oil sizzles (drop a couple drops of water on it) submerge the potato balls in the batter & drop quickly in oil. This is the messy part as the flour mixture is runny but it gives the pakoras the unique shape that the batter can sometimes make!
